Boil potatoes in water with skins on until a skewer passes through the middle of the potatoes easily and comes out clean.
Remove water and skin them whilst hot.
Mash potatoes very well.
Mix in butter and salt.
Pass potatoes through a sieve or a.special potato masher directly onto the serving dish.
Once placed on the dish do not touch or else the grains, which look like rice, will flatten out.
