Port Sauce

Ingredients
  Port 1 Cup (16 tbs)
  Orange 1 Medium, juiced
  Orange 1 Medium, peeled, peel cut into matchstick lengths
  Plum jelly 3 Tablespoon
  Bay leaf 1 Medium
  Coriander 1⁄8 Teaspoon
  Drippings 3 Cup (48 tbs)
  Salt To Taste
  Cornstarch 2 Teaspoon
Directions

Heat port, orange juice and peel in skillet.
Reduce to half.
Add jelly, bay leaf, coriander and drippings.
Reduce again.
Remove bay leaf.
Salt to taste.
Thicken with cold cornstarch that has been mixed with a little port.
