Gangbang Ham With Port Sauce

Ingredients
  Tenderized ham 12 Pound
  Cloves 40
  Water 1 Quart
  White wine 2 Cup (32 tbs)
  Cinnamon stick 1 Small
  Apples 2 Medium, quartered
  Orange 1 , cut into pieces
  Crushed pineapple 1 Cup (16 tbs)
  Brown sugar 1 Pound
For port sauce
  Port 1 Cup (16 tbs)
  Orange 1 Medium, juiced
  Orange 1 Medium (Use Peel Cut Into Matchstick Lengths)
  Plum jelly 3 Tablespoon
  Bay leaf 1 Medium
  Coriander 1⁄8 Teaspoon
  Drippings 3 Cup (48 tbs)
  Salt To Taste
  Cornstarch 2 Teaspoon
Directions

Remove excess fat from ham.
Score with cooky cutter or knife, making squares.
In each square place a clove.
Set in roaster.
Add water, wine, cinnamon, apples, orange and pineapple with juices.
Bake at 3000 2 hours, basting every 20 minutes.
Sprinkle brown sugar on top of ham.
Bake 1 hour longer, basting every 10 minutes to glaze ham evenly.
If liquid reduces too fast during baking, keep adding hot water.
When ham is cooked, liquid should be reduced to a heavy syrup.
Prepare the Port Sauce
Heat port, orange juice and peel in skillet.
Reduce to half.
Add jelly, bay leaf, coriander and drippings.
Reduce again.
Remove bay leaf.
Salt to taste.
Thicken with cold cornstarch that has been mixed with a little port.
Serve ham with Port Sauce.
Serves 16 to 18.
