  Pears 6
  Cinnamon stick 2 Inch
  Sugar 3⁄4 Cup (12 tbs)
  Water 1⁄2 Cup (8 tbs)
  Lemon slice 1
  Port wine 1⁄2 Cup (8 tbs)
  Nutmeg 1⁄8 Teaspoon

Choose pears of equal size and shape.
Core the pears from the bottom.
Peel, leaving the stems on.
If the bottoms are uneven, trim them so that the pears will stand upright.
Combine the sugar, lemon slice, nutmeg, cinnamon stick, and water in a deep, straight sided glass, stainless steel, or enamel saucepan.
Stand the pears upright in the pan.
Add enough port wine to cover them by 1/2 inch.
Bring slowly to a boil, reduce the heat, and simmer, covered, for 1 hour.
Place the pears in a glass bowl.
Strain the sauce over them.
Refrigerate overnight.
