Millet /Kurakkan Porridge

Kurrakan porridge is creamy custard with rice flakes/oats in it .
  Water 4 Cup (64 tbs)
  Millet flour 4 Tablespoon
  Rice flakes/Oats / 2 heap tables spoons of both 4 Tablespoon
  Coconut cream/2 cups water with 2 heap table spoons of coconut milk powder 2 Cup (32 tbs)
  Garlic 8 , chopped
  Red onion 1 Large, chopped
  Curry leaves 4
  Salt To Taste

Combine all the ingredients except the coconut cream and the salt in a saucepan. Cook on a medium fire and stir until thick.

When thick add the coconut milk and salt to taste and stir. Take off the fire when the broth starts to boil.
Serve when slightly cool.

If you are using coconut milk powder add the 2 cups of water with the rest of the water. When the the broth is thick add the coconut milk powder and salt to tast.

I thought of this for my husband who became a diabetic patient after years of enjoying good food . I had to make something savoury ,very healthy ,nutritious and quick for breakfast. So far , not only my husband but my whole family loves it.Espesially my grand son ,little Chesath.Initially I added only rise flakes later I added oats wich is very good for colesterol and gave a creamier consistancy. Even without the flakes and oats the millet porraidge is nice.
