|Milk||2 Cup (32 tbs)|
|Vanilla extract||1 Teaspoon|
1. Mix egg yolk, 3 tablespoons of the sugar, salt, tapioca and milk in a 2-quart glass measuring cup. Cover with waxed paper. Cook in microwave oven 8 minutes at HIGH; stir occasionally.
2. Beat egg white in a bowl until frothy. Add remaining sugar and beat until soft peaks form. Add hot mixture to beaten egg white gradually, folding until blended. Mix in vanilla extract.
3. Allow to stand 20 minutes; stir.
