Stuffed Pork Tenderloin Patties
|Mushrooms||16 Medium, chopped|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Orange basting sauce||1⁄2 Cup (8 tbs)|
Remove excess fat from patties and flatten to about 1/4 inch thickness.
Set patties aside.
To make stuffing, cook bacon in a skillet until crisp; drain on absorbent paper, crumble, and set aside.
Pour off all but 3 tablespoons bacon fat and add mushrooms and onion to skillet.
Cook until mushrooms are lightly browned and onion is soft, stirring frequently.
Remove from heat and mix in bacon, ketchup, and salt.
Sprinkle meat lightly with salt.
Spoon stuffing equally onto half of the patties.
Top with remaining flattened patties.
Brush outside surfaces of meat with cooking or salad oil.
Grill in a broiler basket or on grill about 6 inches from coals 25 to 30 minutes, turning frequently and brushing with Orange Basting Sauce.
