Pork Chops With Mozzarella

  Thinly sliced onions 3 1⁄2 Ounce
  Garlic 1 Clove (5 gm), cut in half
  Carrot 7 , finely grated
  Celery sticks 2 , cut into very thin strips
  Tarragon vinegar 3 Tablespoon
  Italian tomatoes 1 Can (10 oz)
  Salt To Taste
  Pepper To Taste
  Dried thyme 1⁄2 Teaspoon
  Sugar 1⁄2 Teaspoon
  Chili powder 1⁄4 Teaspoon
  Olive oil 3 Tablespoon
  Pork chops 4
  Mozzarella cheese slice 4

Place the onions, garlic and 2 (1) tablespoons of water in a small casserole.
Microwave, uncovered, on HIGH for 2 minutes.
Add the carrot, celery and vinegar to the casserole.
Cover and microwave on HIGH for 3 minutes.
Add the tomatoes to the other vegetables.
Season with salt andpepperandaddthethyme, sugar, chili powder and half of the olive oil.
Stir well.
Cover and microwave on HIGH for 5 minutes.
Heat a browning dish in the microwave oven for 6-8 minutes, following the manufacturer's instructions.
Puree the contents of the casserole in a food processor.
Make several grooves with a knife in each pork chop and brush on both sides with the remaining oil.
Season with salt and pepper.
When the browning dish is hot, put in the pork chops, turning after 1 minute and placing the bone toward the center of the dish.
Pour over the sauce.
Cover and microwave on HIGH for 8 minutes.
Put a slice of mozzarella on each pork chop.
Sprinkle pepper on the cheese.
