Ginger Pork Chops With Apples And Prunes

Ingredients
  Pitted prunes 8 , cut in half
  Lemon 1⁄2 , zest coarsely grated
  Brandy 1⁄4 Cup (4 tbs)
  Center cut pork chops 4 , trimmed completely of fat (thick)
  Fresh ginger slice 2 , minced
  Apple 1 Large, cored and thickly sliced
  Black pepper To Taste
  Apple juice 1 Cup (16 tbs)
  Corn oil 2 Tablespoon
  Garlic 2 Clove (10 gm), minced
  Plain low fat yogurt 1 Cup (16 tbs), mixed with 1 tablespoon cornstarch
  Cornstarch 1 Tablespoon
Directions

Put prunes in bowl with brandy while you prepare rest of ingredients.
Season chops with pepper.
Heat oil in skillet large enough to hold the chops.
Saute chops with the lemon zest, garlic and ginger in the hot oil until chops are browned on both sides.
Add apples, prunes, brandy and apple juice.
Cover and cook until chops are tender, 20 to 30 minutes.
Stir yogurt with cornstarch and mix into chops.
Stir to mix well with sauce; reduce heat and cook just until sauce thickens a bit and is heated through.
Freeze, in portions suitable for your family's use.
