Mama Sita'S Lechon Kawali

Ingredients
  Pork liempo 1 Large (Side Bacon With Rind, Whole)
  Water 4 Cup (64 tbs)
  Salt To Taste
  Cooking oil 4 Cup (64 tbs)
  Lechon sauce 8 Ounce (Mama Sita's, 1 Bottle)
Directions

Combine pork, water and salt in a saucepan and bring to a boil.
Lower the heat and simmer until the pork is tender. Drain the pork and cool.
Prick skin with fork and rub with salt. Leave in colander to dry for an hour (or put inside the refrigerator to dry overnight).
Heat cooking oil in a deep fryer or wok on high heat. Fry pork and cover. Cook until golden brown and crispy. Cut inot serving piecces and serve with Mama Sita's Sarsa ng lechon (sauce for roasts).
