  Garlic 2 Clove (10 gm) (Per Pound Of Pernil)
  Olive oil 1 Teaspoon (Per Pound Of Pernil)
  Salt 1 Teaspoon (Per Pound Of Pernil)
  Black pepper 1 Teaspoon (Per 5 Pounds Of Pernil)
  Oregano 1 Teaspoon (Per 5 Pounds Of Pernil)
  Vinegar 1 Teaspoon (Per Pound Of Pernil)
  Sofrito 1 Teaspoon (Per Pound Of Pernil)
  Water 2 Cup (32 tbs)

Sofrito is a traditional mixture like "trinity" in New Orleans cooking. Sofrito is: •2 medium green peppers, seeds removed •1 red sweet pepper, seeds removed •2 large tomatoes •2 medium onions, peeled •1 head of garlic, peeled •1 bunch cilantro leaves •1/2 bunch parsley leaves Peel garlic and chop ingredients into sizes that are small enough to fit into a food processor or blender. Put chopped vegetables into food processor. Store in glass jar in refrigerator for easy Latino recipes calling for Sofrito!
