Pork Croquettes

Ingredients
  Butter 1⁄4 Cup (4 tbs)
  Flour 1⁄4 Cup (4 tbs)
  Salt 1⁄2 Teaspoon
  Black pepper 1⁄4 Teaspoon
  Milk 1 Cup (16 tbs)
  Finely chopped onion 2 Tablespoon
  Ground cooked pork 2 Cup (32 tbs)
  Fine dry bread crumbs 1 Cup (16 tbs)
  Egg 1
  Water 1 Tablespoon
Directions

Melt butter in saucepan, blend in flour, salt, and pepper; add milk gradually.
Cook, stirring, until mixture thickens and comes to a boil.
Remove from heat; stir in onion and pork.
Blend; refrigerate for several hours, or overnight.
Give favorite Shape and dip in crumbs, then in egg beaten with water, then in crumbs again.
Fry in deep fat at 390° for 2 minutes, or until browned
