Pork Loin With Plum Sauce

Ingredients
  Plum sauce 2 Tablespoon
  Pork loin bone in 4 Pound, with back bone cracked between ribs for easy carving
Directions

Prepare plum sauce and set 1 cup aside.
Cover and refrigerate remaining sauce.
Place roast, fat side down, on a nonmetallic rack in a 7 by 11 inch baking dish.
Microwave, uncovered, on MEDIUM HIGH (70%) for 30 minutes, brushing generously with plum sauce after 15 minutes.
Turn roast fat side up.
Microwave, uncovered, on MEDIUM HIGH (70%) for 30 minutes, brushing generously with plum sauce after 15 minutes.
When done, a meat thermometer or probe inserted in thickest portion (without touching bone) should register 160°.
If below 160°, microwave, uncovered, on MEDIUM HIGH (70%) for 10 to 15 more minutes, checking for doneness at 5 minute intervals.
Transfer roast to a serving platter, cover loosely with foil, and let stand for 10 to 15 minutes or until a meat thermometer registers 170°.
Skim fat from drippings; stir remaining plum sauce into drippings.
Microwave, uncovered, on HIGH (100%) for 1 to 2 minutes or until heated through.
Pass sauce in a separate bowl.
