Apricot Sauced Pork Chops
|Orange juice||3⁄4 Cup (12 tbs)|
|Snipped dried apricots||1⁄2 Cup (8 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Ground cloves||1⁄4 Teaspoon|
|Pork chops||6 , cut 3/4 inch thick|
In small saucepan combine juice, apricots, sugar, cloves, and 1/4 cup water.
Bring to boiling; cover and simmer till apricots are tender, 20 to 25 minutes.
Meanwhile, trim fat from pork chops.
Heat trimmings till 1 tablespoon fat accumulates; discard trimmings.
Brown the chops in hot fat.
Sprinkle generously with salt and pepper.
Place chops in 11x7 1/2x1 1/2 inch baking pan.
Spoon apricot mixture over.
Cover; refrigerate up to 24 hours.
Bake, covered, at 350Â° till tender, 45 to 50 minutes.
Makes 6 servings.
