Curried Pork Roast
|Loin pork||7 Pound|
|Plain yogurt||1⁄2 Cup (8 tbs)|
|Grated onion||1⁄4 Cup (4 tbs)|
|Vegetable oil||1 Tablespoon|
|Curry powder||1⁄4 Cup (4 tbs)|
|Ground ginger||1 Teaspoon|
|Ground cardamom||1⁄2 Teaspoon|
Place pork loin, fat-side up, in large shallow bak-ing pan.
Combine remaining ingredients in small bowl.
Rub mixture over roast.
Cover and refrig-erate 24 hours.
Preheat oven to 325Â°.
Remove pork from dish; place on rack in shallow roasting pan.
Roast 2 to 2 1/2 hours or until meat juices run clear when meat is pierced with a fork.
Garnish with orange slices and watercress, if desired.
