Curried Pork Roast

the curried pork roast is prepared with loin of pork. Marinated with a mix of yogurt, onions and curry powder with ginger and cardamom, the curried pork roast os roasted and can be served garnished with orange slices and watercress.
Ingredients
  Loin pork 7 Pound
  Plain yogurt 1⁄2 Cup (8 tbs)
  Grated onion 1⁄4 Cup (4 tbs)
  Vegetable oil 1 Tablespoon
  Curry powder 1⁄4 Cup (4 tbs)
  Salt 2 Teaspoon
  Ground ginger 1 Teaspoon
  Ground cardamom 1⁄2 Teaspoon
Directions

Place pork loin, fat-side up, in large shallow bak-ing pan.
Combine remaining ingredients in small bowl.
Rub mixture over roast.
Cover and refrig-erate 24 hours.
Preheat oven to 325°.
Remove pork from dish; place on rack in shallow roasting pan.
Roast 2 to 2 1/2 hours or until meat juices run clear when meat is pierced with a fork.
Garnish with orange slices and watercress, if desired.
