Wegmans Slow Roasted Jerk Pork Shoulder

This not to be missed tasty recipe is a continental classic. This dish can be served as a main dish.
Ingredients
  Pork shoulder 7 1⁄2 Pound
  Jerk seasoning 10 Ounce (Tropical Pepper Co. Island)
Directions

Day before serving:

1. Score top and bottom of pork (about 3/4-inch deep) diagonally in a diamond pattern.

2. Coat pork well with sauce (use gloves). Cover well with plastic wrap; refrigerate overnight.

Day of:

1. Preheat oven to 275 degrees.

2. Remove plastic wrap; transfer pork to shallow roasting pan. Cook uncovered, 7-8 hours. Meat can be pulled with tongs or sliced for serving.

Serve with Wegmans Caribbean Sauce

We'll try it! Looks great, especially the cook and forget - 7 hours. I wonder if the overnight basting/marinating is really necessary. I've heard that five minutes! is all that's necessary.
