Pork & Rice, Chinese Style
|Diced cooked pork||2 Cup (32 tbs)|
|Cooked rice||3 Cup (48 tbs)|
|Lard/Pork drippings||6 Tablespoon|
|Green pepper||1 , finely diced|
|Chopped green onions||5 Tablespoon|
|Soy sauce||5 Tablespoon|
|Button mushrooms||1 Can (10 oz)|
|Eggs||4 , lightly beaten|
|Tomatoes||3 Medium, peeled and seeds removed|
Cook pork and rice in lard at a moderate temperature, stirring constantly, until heated through, about 5 minutes.
Add green pepper and green onions; continue stirring and cook 10 minutes.
Add soy sauce; mix carefully.
Drain mushrooms; add with beaten eggs.
Cook slowly and continue stirring until eggs are cooked.
Cut tomatoes into strips; fold tomatoes into mixture and cook about 1 minute longer.
