Pork & Rice, Chinese Style

Ingredients
  Diced cooked pork 2 Cup (32 tbs)
  Cooked rice 3 Cup (48 tbs)
  Lard/Pork drippings 6 Tablespoon
  Green pepper 1 , finely diced
  Chopped green onions 5 Tablespoon
  Soy sauce 5 Tablespoon
  Button mushrooms 1 Can (10 oz)
  Eggs 4 , lightly beaten
  Tomatoes 3 Medium, peeled and seeds removed
Directions

Cook pork and rice in lard at a moderate temperature, stirring constantly, until heated through, about 5 minutes.
Add green pepper and green onions; continue stirring and cook 10 minutes.
Add soy sauce; mix carefully.
Drain mushrooms; add with beaten eggs.
Cook slowly and continue stirring until eggs are cooked.
Cut tomatoes into strips; fold tomatoes into mixture and cook about 1 minute longer.
Serve immediately.
