Pork Chops Supreme

Ingredients
  Pork chops 6 (1 Inch Thick)
  Salt 1 Teaspoon
  Pepper 1⁄2 Teaspoon
  Shortening 1⁄4 Cup (4 tbs)
  Sliced onions 6
  Green pepper 1 Large
  Uncooked minute rice 6 Tablespoon
  Tomatoes 1 1⁄2 Can (15 oz)
Directions

Dust chops with salt and pepper; brown in shortening over medium heat.
On top of each chop, place a slice of onion, then a ring of green pepper.
Add 1 tablespoon rice in each pepperring.
Simmer slowly for 45 minutes.
When almost done, put tomatoes on top of rice; cook until done.
