Pineapple Marinated Pork
|Pork tenderloins||32 Ounce|
|Unsweetened pineapple juice||2 Cup (32 tbs)|
|Ground cinnamon||1 Tablespoon|
|Ground ginger||1 Tablespoon|
|Pineapple slices/4 canned pineapple slices||4 (Half Inch Thick)|
|Slivered almond pieces||2 Ounce|
|Cilantro||2 Tablespoon, chopped|
Remove any visible fat from the pork and place the pork in a flat glass pan.
Combine the pineapple juice, cinna mon, ginger and salt and pour over the pork.
Cover tightly and refrigerate for 2-12 hours.
Coat the grill with cook ing spray and preheat for 5 minutes.Grill the pork for 3 minutes.
Top each tenderloin with 1 pineapple slice: Grill for 2-3 minutes, or according to your preference.
Garnish each tenderloin with slivered almonds and cilantro and serve.
