Pork Tenderloin & Chops

Ingredients
  Pork tenderloins 8 Ounce
  Vegetable oil 1 Tablespoon
  Honey 1 Tablespoon
  Low sodium soy sauce 2 Tablespoon
  Cider vinegar 1 Tablespoon
  Ground ginger 1 Tablespoon
  Ground cinnamon 1⁄4 Teaspoon
  Apricot marmalade 2 Tablespoon
  Peaches 3 , peeled and cut into 0.5-inch pieces
  Chopped red onion 1⁄4 Cup (4 tbs)
  Parsley 2 Tablespoon, minced
  Nonfat cooking spray 1
Directions

Remove any visible fat from the pork.
Place the pork in a flat glass pan.
Combine the oil, honey, soy sauce and vinegar and pour over the pork.
Cover tightly and refrigerate 1-8 hours.
In a large serving bowl, combine the ginger, cinnamon, marmalade, peaches, onion and parsley.
Toss lightly and refrigerate.
Coat the grill with cooking spray and preheat for 5 minutes.
Grill the tenderloins for 4-6 minutes, or according to your preference.
To serve, spoon the salsa over the tenderloins.
