Roast Pork (Maiale Arrosto)
|Loin pork||4 Pound (2 Kg)|
|Garlic||4 Clove (20 gm), sliced|
|Onion||1⁄2 , minced|
|Olive oil||2 Tablespoon|
|Crushed bay leaves||1 Teaspoon|
|Water||1⁄2 Cup (8 tbs) (Adjust Quantity As Needed)|
Remove the rind and half the fat from the loin.
Make good sized incisions into the loin and insert a slice of garlic, minced onion mixed with oil and marjoram and a couple of rosemary leaves.
Rub the meat with salt and pepper and sprinkle with crushed bay leaf.
Place loin in a baking dish and pour a little water in the bottom of the pan.
Bake in a 375Â°F (190Â°C) oven for about 2 1/2 hours.
