Casserole Of Pork And Apples
|Boneless pork loin||3 Pound, cut into 1.5 inch cubes|
|Onions/2 onions sliced||4 , washed and sliced|
|Green cooking apples||2 , peeled, cored and sliced|
|Curry powder/Cumin powder||1 Teaspoon|
|Apple cider||1 1⁄4 Cup (20 tbs)|
|White vermouth/Apple brandy||1⁄4 Cup (4 tbs)|
|Ground black pepper||To Taste|
Brown the pork in hot oil in a skillet and transfer the cubes to a casserple.
Cook the leeks or onions and apples in the same oil for 3 minutes until softened.
Stir in the cumin or curry powder and cook 1 minute.
Stir in the flour and all the remaining ingredients.
Transfer to a 2-quart glass or ceramic cas serole.
Cover and cook in the microwave oven for 1 hour on "roast" setting.
Rotate the dish one quarter of a turn after 30 minutes.
Allow to rest 10 minutes before serving.
