Pork And Cucumber
|Lean pork||2 Pound|
|Water||2 1⁄2 Cup (40 tbs)|
|Soy sauce||1⁄4 Cup (4 tbs)|
|Ground ginger||1 Pinch|
Wipe the meat and cut into small cubes.
Put in a pan with the water.
Bring to the boil, remove the scum, cover the pan with a tight fitting lid and simmer for 1 hour.
Add the soy sauce, sherry, salt and ginger.
Cook for another 30 minutes.
Peel the cucumber and cut into thin slices.
Heat the oil and fry the cucumber for 3-4 minutes, stirring all the time.
Pile the cucumber in a dish and pour the pork and some of the liquid over.
