Pork And Cucumber is an authentic combnation found in chinese cooking. Both the ingredients are mellow in flavor and imbibe the flavor of the rest of the dish as its own You will definitely fall in love with this is easy to prepare Pork And Cucumber dish.
  Lean pork 2 Pound
  Water 2 1⁄2 Cup (40 tbs)
  Soy sauce 1⁄4 Cup (4 tbs)
  Sherry 2 Tablespoon
  Salt 1 Teaspoon
  Ground ginger 1 Pinch
  Cucumber 1 Large
  Oil 2 Tablespoon

Wipe the meat and cut into small cubes.
Put in a pan with the water.
Bring to the boil, remove the scum, cover the pan with a tight fitting lid and simmer for 1 hour.
Add the soy sauce, sherry, salt and ginger.
Cook for another 30 minutes.
Peel the cucumber and cut into thin slices.
Heat the oil and fry the cucumber for 3-4 minutes, stirring all the time.
Pile the cucumber in a dish and pour the pork and some of the liquid over.
