Rolled Pork Roast
|Rolled pork loin or shoulder||4 Pound|
|Black pepper||To Taste, freshly ground|
Have butcher score rind of pork.
Wipe roll and rub surface with salt and pepper.
Place roll on a rack in a roasting pan and cook in a moderate oven for 40 minutes per lb plus 40 minutes.
Lift roast pork onto a carving dish, keep warm.
Make gravy from pan juices and flavor it with a pinch of herbs or a squeeze of lemon juice.
