Red Pork Chops

This Red Pork Chops surprises you with the flavors packed into it. For all those who love the strong tastes of ginger and pork cooked in sherry, this is defintely the dish for you. The red pork chops is easy to make and is a winner.
  Pork chops 2 Pound
  Water 1 1⁄4 Cup (20 tbs)
  Fresh ginger 1 Ounce
  Soy sauce 1⁄2 Cup (8 tbs)
  Sherry 2 Tablespoon
  Salt 1 Teaspoon
  Brown sugar 1 Teaspoon

Put the chops in a large saucepan with the water.
Bring to the boil, remove the scum, cover the pan with a tight fitting lid (this is essential to prevent any evaporation of the small amount of liquid) and simmer very gently for about 1 hour.
Shred the ginger and add to the pan with the rest of the ingredients; simmer for a further 30 minutes.
