Zesty Smoked Pork Roast
|Vinegar||1 Cup (16 tbs)|
|Canned tomato sauce||8 Ounce|
|Dried onion flakes||1 Tablespoon|
|Dry mustard||1 Tablespoon|
|Firmly packed brown sugar||2 Tablespoon|
|Worcestershire sauce||2 Tablespoon|
|Hot sauce||1 Teaspoon|
|Garlic||1 Clove (5 gm)|
|Red pepper||1⁄4 Teaspoon|
|Pork loin roast||5 Pound|
Combine first 9 ingredients in a saucepan, stirring well.
Bring to a boil; reduce heat, and simmer, uncovered, 10 minutes, stirring occasionally.
Remove from heat, set aside.
Prepare charcoal fire in smoker, and let burn 10 to 15 minutes.
Place water pan in smoker; fill with 1/4 cup sauce and 2 quarts water.
Coat food rack with cooking spray, and place in smoker.
Trim excess far from roast.
Place roast on food rack.
Baste roast generously on all sides with sauce.
Insert meat thermometer, being careful nor to touch bone or far.
Cover with smoker lid; cook 4 hours.
Uncover, baste roast with sauce.
Cover and cook 5 to 7 hours or until meat thermometer registers 170Â°, basting with sauce every hour.
Refill water pan with sauce and water as needed.
Transfer roast to a serving platter, let stand 10 minures before serving.
