Skewered Pork Balls With Apple

Ingredients
  Lean ground pork 1 1⁄2 Pound
  Eggs 1
  Fine dry bread crumbs 1⁄3 Cup (5.33 tbs)
  Finely chopped onion 1⁄3 Cup (5.33 tbs)
  Apple juice 2 Tablespoon
  Ground ginger 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Ground sage 1⁄4 Teaspoon
  Ground pepper 1⁄4 Teaspoon
  Bacon slices 8
  Golden apples 2
  Sweet pickle relish 1 Tablespoon, optional
Directions

Combine the ground pork, egg, bread crumbs, onion, apple juice, salt, ginger, sage, and pepper.
Divide into 16 equal-sized portions; shape each into a ball; set aside.To assemble the skewers (you'll need 4), pierce one end of a bacon strip with a skewer, then push on a pork ball, pierce the bacon again, and add an apple quarter.
Pierce bacon again, push on another pork ball, and then pierce the bacon end; the bacon forms S-curves around the meat and apple.
Repeat the procedure until each skewer has 2 bacon strips, 4 pork balls, and 2 apple quarters; space elements loosely so bacon will brown evenly.Cook on a grill about 6 inches above a solid bed of low glowing coals.
Turn gently (with the help of a wide spatula) as needed to brown evenly until bacon is crisp and pork is no longer pink inside (15 to 20 minutes total).
Pass sweet pickle relish as an accompaniment.
