Crown Roast Of Pork
|Crown pork roast||8 Pound|
|Butter||2⁄3 Cup (10.67 tbs)|
|Minced onion||1⁄2 Cup (8 tbs)|
|Chopped celery||1 Cup (16 tbs)|
|Bread crumbs||8 Cup (128 tbs)|
|Sage/Thyme / marjoram||2 Teaspoon|
|Poultry seasoning||To Taste|
|Canned sliced mushrooms||8 Ounce|
Season roast to taste with salt and pepper.
Place in roasting pan, bone ends up; wrap bone ends in foil.
Bake, uncovered, in 325-degree oven for 2 hours and 20 minutes.
Melt butter in skillet; add onion.
Cook until transparent.
Stir in celery; heat through.
Turn into deep bowl; add all remaining ingredients, 2 tea- spoons salt and 1/2 teaspoon pepper.
Moisten with water, if necessary.
Place in center of crown.
Bake for 1 hour longer.
Replace foil wraos on bone end with crab appies to serve.
