Pork Chop With Apple Bacon Demi-Glaze

Ingredients
  Pork loin chops 14 Ounce (Center cut Pork Loin; For the Pork Lion)
  Regular salt 1 Dash (For the Pork Lion)
  Black pepper 1 Dash (For the Pork Lion)
  Garlic powder 1 Dash (For the Pork Lion)
  Seasoning 1 Dash (For the Pork Lion)
  Potato 2 Medium, grated (For the Sweet potato pancakes)
  Sweet potato 1 Medium, grated (For the Sweet potato pancakes)
  Onion 1⁄2 Cup (8 tbs), finely grated (For the Sweet potato pancakes)
  White pepper 1 Dash (For the Sweet potato pancakes)
  Nutmeg 1 Dash (For the Sweet potato pancakes)
  Egg 1 (For the Sweet potato pancakes)
  Flour 1 Tablespoon (For the Sweet potato pancakes)
  Corn starch 1 Tablespoon (For the Sweet potato pancakes)
  Oil 1⁄2 Cup (8 tbs) (For the Sweet potato pancakes)
  Sweet butter 1 Tablespoon (For the Apple Bacon Demi-Glaze)
  Shallot 1 Tablespoon, finely chopped (For the Apple Bacon Demi-Glaze)
  Smoky bacon 2 Tablespoon, finely chopped (Apple-wood smoked bacon; For the Apple Bacon Demi-Glaze)
  Sundried cranberries 2 Tablespoon (For the Apple Bacon Demi-Glaze)
  Apple 1 Medium, slice (For the Apple Bacon Demi-Glaze)
  Port wine/Applejack brandy 1 Dash (For the Apple Bacon Demi-Glaze)
  Demi-glace 1⁄4 Cup (4 tbs) (For the Apple Bacon Demi-Glaze)
  Butter 1 Tablespoon (For the Apple Bacon Demi-Glaze)
Directions

GETTING READY
1. Preheat oven to 450 degrees Fahrenheit.

MAKING
2. For the Pork Lion:Season the pork loin with salt, pepper, garlic powder and any other choice of seasoning.
3. Grill the pork chop for about 4-5 minutes of both sides.
4. Pop the pork chop into the oven for about 10 minutes for a medium-well chop.
5. For the Sweet Potato Pancakes: In a bowl, mix the grated potato, sweet potato and onion along with white pepper and nutmeg.
6. Add the egg and mix.
7. Add 1 tablespoon of flour and corn starch and mix.
8. Heat a pan with oil.
9. Scoop the potato mix into the oil and cook on both sides for 5 minutes.
10. Remove from stove, place in a baking tray and pop into the oven for 5 minutes.
11. For the Apple Bacon Demi-Glaze: In a pan, heat the sweet butter.
12. Add shallots, apple wood smoked bacon, sundried cranberries and apple and saute.
13. Add a dash of Port Wine and flambe.
14. Add the demi-glace and butter and stir.

FINALIZING
15. Plate the pork chop and sweet potato pancakes. Ladle the apple bacon demi- glaze over the pork chop.

SERVING
16. Serve as a delicious main course.
