Senor Frogs - Cochinita Pibil Part 2

Ingredients
  Pork 4 Pound (pork butt and pork shoulder)
  Orange juice 3 Cup (48 tbs)
  Adobo 2 Cup (32 tbs) (pre made from onions, garlic, vinegar, salt , pepper and spices)
  Red onion 1 Large, thinly sliced
  Vinegar 3 Cup (48 tbs)
  Orange 1 Large, squeezed
  Lime 2 Medium, squeezed (1 for the green salsa)
  Serrano pepper 3 Large (1 thinly sliced for the red onion salsa 2 roughly chopped for the green salsa)
  Cilantro 3 Cup (48 tbs) (1/4 cup finely chopped for the red onion salsa and 1/2 cup for the green salsa)
  Salt 2 Teaspoon (1 teaspoon for the green salsa)
  Pepper 2 Teaspoon (1 teaspoon for the green salsa)
  Tomatillos 8 Medium, quartered (for the green salsa)
  Avocado 1 Large (1 for the green salsa and 1/4 thinly sliced for garnish)
  Yellow onion 1 Large (for the green salsa)
  Tortillas 30 Medium
Directions

GETTING READY
1. Pre heat the oven to 350 degrees Farenheit.
2. Marinate the pork in orange juice overnight and keep it refrigerated.

MAKING
3. Line a large metal baking dish with banana leaves.
4. Place the pork in it.
5. Pour the adobo in it and mix well.
6. Cover with banana leaf and thereafter with foil.
7. Place in the oven and let it cook for 2 hours.

FOR THE RED ONION SALSA
8. In a mixing bowl, place the thinly sliced red onion.
9. Pour the vinegar in it.
10.Squeeze in the juice from 1 orange and 1 lime.
11.Throw one thinly sliced serrano pepper in it.
12.Place 1/4 cup finely chopped cilantro in it.
13.Season with salt and pepper.
14.Toss gently and keep aside in a bowl.

FOR THE GREEN SALSA
15.In the blender, blend the tomatillos with a little water.
16.Throw in 1/8 of a diced yellow onion.
17.Throw in 2 roughly chopped serrano peppers in it.
18.Add 1/2 a cup of cilantro.
19.Add the flesh from 1 avocado.
20.Squeeze in the juice of 1 lime.
21.Season with salt and pepper.
22.Pulse it to the consistency of a thick paste.
23.Pour in a bowl and keep aside.

FINALIZATION
24.Lightly toast the tortillas.
25.Take the pork out of the oven.
26.On a platter, place the tortillas.
27.Put the pork on top of it.
28.Top with the red onion salsa,chopped cilantro and sliced avocado.

SERVING
29.Serve the pork stuffed tortillas with a side of rice and beans along with the red onion and green tomatillo salsa.
