1) Remove any membrane or fat off the pork rack
2) Generously rub the racks with the rubs of your choice and then loosely place the strips of bacon over the rack like a web and keep aside
3) Place the racks on the hot grill to smoke for about two hours till done
4) Once 1 ½ hours are done, baste some barbecue sauce of choice onto the rack to seal the moistness of the meat
