Pork Chops Duchesse
|Flour||1 Cup (16 tbs)|
|Sauerkraut||2 1⁄2 Cup (40 tbs)|
|Mashed potatoes||1 Cup (16 tbs)|
Salt pork chops; dredge in flour.
Brown chops in 3 tablespoons hot fat in skillet.
Pour fat into baking dish; add onion.
Cover onion with sauerkraut.
Place chops on top of sauerkraut.
Bake, covered, at 300 degrees for 1 hour and 30 minutes.
Cover chops with layer of mashed potatoes.
Bake at 400 degrees until potatoes are browned lightly.
