Bbq Pork Stir Fry

Ingredients
  Boil in bag rice 2 Cup (32 tbs) (1 bag, UNCLE BEN'S Brand)
  Whole pork tenderloin 1 Pound
  Oil 1 Tablespoon
  Minced garlic 2 Teaspoon
  Minced ginger 2 Teaspoon
  Frozen stir fry vegetable medley 16 Ounce (1 package)
  Barbecue sauce 2⁄3 Cup (10.67 tbs)
  Chopped cilantro 2 Tablespoon
Directions

MAKING
1 As per the package directions, cook the rice.
2 Trim any fat from the tenderloin, cutting in half lengthwise, then into 1/4-inch slices.
3 In a large skillet, heat oil over medium-high heat until hot.
4 Add in pork, garlic and ginger, cooking for about 3 minutes or until pork is no longer pink.
5 Add in the vegetables and 1/4 cup water.
6 Cook, covered for 3 minutes, stirring occasionally.
7 Stir in the barbecue sauce.
8 Cover and lower the heat.
9 Simmer for 5 to 7 minutes or just until vegetables are tender and pork is cooked through.

SERVING
10 Serve pork and vegetables over rice.
11 Garnish with chopped cilantro (optional)
