Herbed Stuffed Pork

Ingredients
  Pork shoulder 5 Pound
  Onion 2 Tablespoon, finely chopped
  Celery 2 Tablespoon, finely chopped
  Butter 2 Tablespoon
  Fresh breadcrumbs 2 Cup (32 tbs)
  Salt 1⁄2 Teaspoon
  Rosemary leaf 1⁄2 Teaspoon, crumbled
  Thyme leaf 1⁄4 Teaspoon
  Parsley 1⁄4 Cup (4 tbs), finely chopped
  Flour 1⁄4 Cup (4 tbs)
Directions

MAKING
1) Using a sharp knife, trim off fat
2) Into a frying pan, dab in the butter and saute the onion and celery till soft
3) Mix together the bread crumbs, salt, thyme, rosemary and parsley
4) Add in the onion mixture and toss to coat
5) Spoon the mixture into the pocket of the pork packing it well and securing it with a cord
6) Into a shallow baking tin, place the meat and roast at 325 F
7) Pour the excess drippings from the tin into a measuring jar
8) Skim off the fat from the top
9) Drain the drippings from the roasting pan into a measuring jar measuring up to 2 cups
10) Take about 1/4 cup of the drippings and then add water to make it 2 cups
11) Add in the flour and cock the flour till it thickens

SERVING
12) Carve the meat into slices and serve with the sauce
