Dixie Pork Chop Roast

Ingredients
  Pork loin 5 Pound, cut into chops
  Regular rice 1⁄2 Cup (8 tbs) (Uncooked)
  Dried apricots 1⁄2 Cup (8 tbs), finely chopped
  Instant beef broth 2 Ounce (1 Sachet)
  Pecans 1⁄4 Cup (4 tbs), coarsely chopped
  Ground mace 1⁄4 Teaspoon
  Golden apricot glaze 3 Tablespoon (For Basting)
Directions

MAKING
1) Into a medium saucepan mix together the rice, apricots an the instant beef broth
2) Add water and cook the rice according to the directions given on the package
3) Add in the pecans and mace to the cooked rice and mix using a fork
4) Using a long skewer insert at each end of the chops to hold together
5) Spoon the rice mixture into the chops evenly
6) Roast the chops in an oven of 325 F for 2 1/2 hours
7) Baste the lamb chops with apricot glaze timely
8) Roast for an additional half hour till the glaze is thickly coated and the meat is cooked

SERVING
9) Serve warm onto a platter with halved apricots as garnish
