Pork And Rotini Casserole
|Boneless lean pork||10 Ounce, cut into 1/2 inch cubes|
|Sliced scallions||1⁄2 Cup (8 tbs)|
|Tri color rotini pasta||3 Ounce|
|Olive oil||4 Teaspoon (1 Tablespoon Plus 1 Teaspoon)|
|Low sodium chicken broth||1 Cup (16 tbs)|
|Sliced red bell pepper||1⁄2 Cup (8 tbs)|
|Sliced green bell pepper||1⁄2 Cup (8 tbs)|
|Diced tomato||1⁄2 Cup (8 tbs)|
|Dried oregano||1⁄2 Teaspoon|
1. Place pork cubes on rack over tray. Microwave on High 1 minute; set aside.
2. In a 2-quart casserole, combine scallions, pasta and oil; stir to coat pasta. Microwave, covered, on High 4 minutes, stirring once.
3. Stir in pork and remaining ingredients. Microwave, covered, on High 5 minutes; stir. Microwave, covered, on Medium 20-23 minutes, or until pasta is tender, stirring every 5 minutes. Let stand 4 minutes.
