Bacon Enhanced Sweet And Sour Pork

  Bacon 2 Tablespoon
  Bacon drippings 2 Tablespoon
  Pineapple chunks 1 Can (10 oz)
  Water 1⁄2 Cup (8 tbs)
  Vinegar 1⁄3 Cup (5.33 tbs)
  Firmly packed brown sugar 1⁄4 Cup (4 tbs)
  Brown sugar 1⁄4 Cup (4 tbs), firmly packed
  Cornstarch 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Soy sauce 1 Tablespoon
  Pineapple juice 1 Cup (16 tbs)
  Green peppers 3⁄4 Cup (12 tbs)
  Thinly sliced green peppers 3⁄4 Cup (12 tbs)
  Onion 1⁄2 Cup (8 tbs)
  Thinly sliced onion 1⁄2 Cup (8 tbs)
Directions

MAKING
1. In a skillet, brown the pork in drippings
2. Drain the pineapple and reserve its juice; combine water with vinegar, brown sugar, cornstarch, salt, soy sauce and pineapple juice, add to the pan and cook till clear and thick
3. Add pork and cook with the lid on over low flame; add green peppers, onion and pineapple and cook for another couple of minutes

SERVING
4. Serve with fried rice
