Herbed And Spiced Pork Loin

Ingredients
  Boneless pork loin 4 Pound, rolled and rind scored at ¾ inch intervals (2 Kilogram)
For marinade
  Onion 1
  Pink peppercorns 2 Tablespoon, crushed
  Green peppercorns 2 Tablespoon, crushed
  Coriander 2 Tablespoon, ground
  Freshly ground black pepper 1 Tablespoon
  Cumin 1 Tablespoon, ground
  Garam masala 1 Teaspoon
  Ground mixed spice 1 Teaspoon
  Turmeric 1 Teaspoon
  Paprika 1 Teaspoon
  Sea salt 1 Teaspoon
  Peanut oil 2 Tablespoon
  Sesame oil 2 Tablespoon
  White vinegar 1 Tablespoon
Directions

GETTING READY
1. Preheat barbecue to a medium heat.

MAKING
2. To make marinade, into a food processor or blender process together onion, pink peppercorns, green peppercorns, coriander, black pepper, cumin, garam masala, mixed spice, turmeric, paprika, salt, peanut oil, sesame oil and vinegar to make a paste.
3. Over the pork rub marinade, place in a glass or ceramic dish, cover and marinate in the refrigerator overnight.
4. on a wire rack set in a baking dish place pork and bake for 1 hour.
5. To a lightly oiled barbecue grill transfer pork and cook, turning frequently, for 1 ½ hours until pork is tender and cooked through.
6. Stand for 10 minutes and then carve the meat.

SERVING
7. Serve with a garnish of greens and if desired with a Chardonnay Wine.
