Roast Pork Loin With Browned Potatoes
|Pork loin||4 Pound|
|Salt||To Taste (Optional)|
|Pepper||To Taste (Optional)|
|Rosemary||To Taste (Optional)|
Place Dutch Oven over medium heat.
Brown roast evenly on all sides.
When valve clicks, reduce heat to low.
Cook 35 to 45 minutes per pound of roast.
Add peeled potatoes around roast, coating each one in the meat juices, about 45 minutes before roast is done.
If gravy is desired, skim off excess fat before thickening the juices.
