Sweet And Sour Pork

Ingredients
  Cooked pork 8 Ounce, boned, cut into 1 inch cubes
  Canned pineapple chunks 2 Cup (32 tbs) (No Sugar Added)
  Green bell pepper strips 1⁄2 Cup (8 tbs)
  Sliced celery 1⁄2 Cup (8 tbs)
  Sliced mushrooms 1⁄2 Cup (8 tbs)
  Sliced onion 1⁄2 Cup (8 tbs), separated into rings
  Pineapple juice 2⁄3 Cup (10.67 tbs) (No Sugar Added)
  Rice vinegar 1⁄2 Cup (8 tbs)
  Cornstarch 1 Tablespoon (Plus Teaspoon)
  Soy sauce 1 Tablespoon
  Salt 1⁄2 Teaspoon
Directions

MAKING
1) In a 2-quart microwave-safe casserole, add the pork cubes, pineapple chunks, bell pepper, celery, mushrooms and onion rings together, toss well to mix.
2) In a small bowl, stir the pineapple juice, cornstarch, soy sauce vinegar and salt, until the cornstarch is dissolved, then pour over the pork mixture.
3) Cover with a plastic wrap and microwave on High for 10 minutes, stirring 1 or 2 times, until thoroughly heated.
Allow to stand for 5 minutes.

SERVING
4) Serve immediately on individual serving plates.
