Roast Belly Of Pork

Ingredients
  Pork belly 4 Pound, boned (2 Kilogram)
  Crustless bread 3 Ounce (White Bread, 75 Gram)
  Parsley sprigs 6 Large
  Pitted prunes 2 Ounce (50 Gram)
  Onion 1 Small
  Dessert apple 1
  Lemon juice 1 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1. Turn the oven to a setting of 425°F/220°C/Gas 7

MAKING
2. In the pork, make a cavity for the stuffing at the same place from where the bones were removed
3. In a processor, add bread, parsley and prunes and chop finely; add grated onion to it, along with lemon juice, apple and seasoning
4. Stuff the joint and secure with a string; sprinkle salt on the skin and roast with the skin side facing up for twenty minutes
5. Turn the setting to 350°F/180°C/Gas 4 and cook for two hours until tender

SERVING
6. Serve as required
