Sweet And Sour Pork

Ingredients
  Pork cubes 10 Ounce (275 Gram, Pieces)
  Frying oil 2 Cup (32 tbs) (For Frying)
  Chicken stock 1⁄2 Pint (300 Milliliter)
  Pineapple slices 3⁄4 Can (7.5 oz) (1 Small Tin)
  Brown sugar 2 Teaspoon
  Tomato ketchup 2 Teaspoon
  Cornflour 1 Tablespoon
  Vinegar 1 Tablespoon
  Carrot 1 , cut into strips
  Soy sauce 2 Teaspoon
  Lemon juice 2 Teaspoon
  Garlic clove 1 Small
Directions

MAKING
1. Marinate the pork in soy sauce, lemon juice, crushed garlic and four tablespoons of pineapple juice overnight
2. Drain the juices away and brown the pork in hot oil; add marinade and stock and allow to simmer for half an hour
3. Adrain away the remaining pineapple juice, add to a pan and blend the rest of the ingredients into it, barring the carrot
4. Add cooking stock and allow to boil; addd pork pieces, pineapple and carrot and simmer for ten minutes

SERVING
5. Goes well with boiled rice or chips
