Pork With Rice And Oranges

Ingredients
  Diced pork roast 2 Cup (32 tbs)
  Oil 2 Tablespoon
  Onion 1 Small, finely chopped
  Long grain rice 1 Cup (16 tbs)
  Paprika 1 Teaspoon
  Cinnamon 1 Teaspoon
  Cumin 1 Teaspoon
  Pine nuts/Slivered almonds 1⁄2 Cup (8 tbs)
  Raisins 1⁄4 Cup (4 tbs), soaked for 5 minutes in hot water and drained
  Chicken broth 2 Cup (32 tbs)
  Orange juice 1⁄2 Cup (8 tbs)
  Butter 1 Tablespoon
  Oranges 2 , rind grated
  Oranges 2 , sliced
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1) Remove all the fat from the pork.
2) Heat the sliced oranges in the microwave for a minute. Keep aside for garnish.

MAKING
3) Take a 2-quart glass or ceramic casserole, heat oil on high in the microwave for 20 seconds.
4) Now add the onions and cook for a minute.
5) Next add the rice and continue cooking for one minute.
6) Mix once.
7) During the process rotate the dish one-quarter of a turn and cook 1 more minute.
8) Now mix all the remaining ingredients leaving the sliced oranges.
9) Add the pork to the mixture.
10) Cover the casserole with lid and cook for 10 minutes.
11) Allow the casserole with mixture to stand for 10 minutes.

SERVING
12) Garnish with sliced oranges.
