Sweet And Sour Pork

Ingredients
  Pork fillet 12 Ounce
  Lard/Shortening 1 Ounce (For Deep Frying)
For sour sauce
  Canned pineapple rings 8 Ounce (1 Tin)
  Vinegar 4 Tablespoon
  Soft brown sugar 3 Ounce
  Soy sauce 1 Tablespoon
  Salt 1⁄4 Teaspoon (Leveled)
  Cornflour 2 Tablespoon (Leveled)
  Green pepper 1 Small, thinly sliced
Directions

GETTING READY
1) With a knife trim fat from meat and cut in cubes.

MAKING
2) In a skillet heat oil and fry till golden brown on all sides. Keep aside.
3) Drain canned pineapple and keep aside the syrup measuring 1/2 pint with water.
4) Mix with vinegar, brown sugar, soy sauce and salt.
5) Add cornflour into a saucepan and add water to mix to form thin paste. Add remaining liquid and stir.
6) Stir and simmer over moderate heat till thick.
7) Mix meat cook covered for 1 hour till meat is tender.
8) Add sliced pepper and pineapple chunks and cook for 15 minutes.

SERVING
9) Pass with boiled or fried rice, bean sprouts and crispy noodles.
