Braised Pork Kidneys
|Olive oil||3 Tablespoon|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Garlic||1 Clove (5 gm), minced|
|Tomato puree||1 Tablespoon|
|Red wine||1 Cup (16 tbs)|
|Dried rosemary||1⁄4 Teaspoon|
|Minced parsley||2 Tablespoon|
1) Slice kidneys into four.
2) Stir fry the kidneys in olive oil together with chopped onion and minced garlic.
3) Add in tomato puree, red wine and rosemary and simmer slowly, covered, for about 30 minutes till the kidneys become soft.
4) Add salt and pepper to taste and garnish with minced parsley.
5) Serve hot with rice.
