Fragrant Aubergine With Pork

Ingredients
  Aubergine 8 Ounce, peeled and cut in pieces 3 inch x 1/2 inch (250 Gram)
  Oil 2 Cup (32 tbs) (For Deep Frying)
  Minced lean pork 1 1⁄2 Ounce (50 Gram)
  Dried prawns 2 Tablespoon, soaked and finely chopped
  Chili paste 2 Teaspoon
  Salted soya beans 1 Teaspoon, mashed
  Finely sliced spring onion 2 Teaspoon
  Dried black mushroom 1 Teaspoon, soaked and chopped
  Chicken stock 1 Cup (16 tbs)
  Chinese rice wine 1 Teaspoon
  Sesame oil 1 Teaspoon
  Sweet and sour sauce 2 Teaspoon (Commercial)
  Dark soy sauce 1⁄2 Teaspoon
  Salt 1⁄4 Teaspoon
  Cornflour 1 Teaspoon, blended with water
  Coriander leaves 1 Tablespoon (To Garnish)
Directions

GETTING READY
1) In a wok with heated oil, deep fry the aubergine pieces for 1 minute.
2) Drain and set aside.

MAKING
3) In the wok with 1 tablespoon oil, stir fry the pork pieces for 2 minutes.
4) Now add, dried prawns, spring onions, mushrooms, chili paste and salted soya beans, to stir fry for 30 seconds.
5) Add all the ingredients except remaining spring onion and coriander.
6) Add the deep fried aubergine to this.
7) Then add corn flour to thicken it.

SERVING
8) Garnish it with coriander and spring onion and serve.
