Pork Chops With Apricots

Ingredients
  Pork chops 1 1⁄2 Pound
  Brown sugar 1 Tablespoon
  Apricot halves/Peach halves, especially yellow peaches peeled, sliced orange may also be substituted for apricots or peaches 8 3⁄4 Ounce, peeled (1 Can)
  Orange peel 2 Teaspoon, finely chopped or grated
  Orange juice 2 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1) Trim all fat from pork chops.

MAKING
2) Take a square baking dish and arrange the chops in it.
3) Add brown sugar, salt and pepper, orange juice and orange peel over each chop.
4) If canned fruit is used, pour half the liquid from it over the chops.
5) Cover and cook for 10 minutes.
6) Toss the chops and place apricots, peaches or orange slices on them.
7) Cover and cook again for 5 minutes till pork is soft.
8) Leave aside for 5 minutes before serving.

SERVING
9) Serve this with baked sweet potatoes or a rice pilaf and a vegetable side dish or tossed salad.
