Original Jerk Pork

Ingredients
  Chopped onion 1⁄2 Cup (8 tbs)
  Chopped garlic 1⁄2 Cup (8 tbs)
  Chopped ginger 1⁄4 Cup (4 tbs)
  Scallions 2
  Scotch bonnet chili To Taste, seeded
  Pimento seeds/Ground allspice 1 Teaspoon
  Chopped thyme 1 Teaspoon
  Soy sauce 1⁄4 Cup (4 tbs)
  Corn oil 1⁄4 Cup (4 tbs)
  Salt To Taste
  Vinegar To Taste
  Pork leg 4 Pound
Directions

MAKING
1)Blend together in a blender, onion, garlic, scallion, chili, ginger, thyme, pimento, corn oil and soy sauce well. Add in vinegar and salt.
2)Coat pork with this marinade and marinate in refrigerator for 2 hours or overnight.cut into serving pieces.
3)Barbecue pork, turning occasionally to avoid burning.

SERVING
4)Serve hot.
