Shredded Pork Saute

Ingredients
  Lean pork 8 Ounce (200 Gram)
  Canned bamboo shoots 4 Ounce, drained and thinly sliced (100 Gram)
  Button mushrooms 4 Ounce, thinly sliced (100 Gram)
  Caster sugar 1 Pinch
  Water 1⁄4 Pint (125 Milliliter)
  Garlic 1 Clove (5 gm), crushed
  Salt 1 Teaspoon
  Cornflour 2 Teaspoon
  Medium dry sherry 1 Teaspoon
  Soya sauce 1 Teaspoon
For marinade
  Oil 2 Teaspoon
  Pepper To Taste
Directions

GETTING READY
1) In a bowl mix marinade ingredients.
2) Make thin slices of the pork and add to the marinade.
3) Keep aside for 10 minutes.

MAKING
4) In a heavy frying-pan heat 1 tablespoon oil.
5) Add bamboo shoots and stir fry for 2 minutes.
6) Drain and keep aside.
7) Add mushrooms and stir fry for a minute.
8) Mix sugar and 1 tablespoon of the water.
9) Simmer covered for 1 minute.
10) Keep the mushroom mixture aside.
11) Heat 2 teaspoons oil and stir fry pork and garlic for 3 minutes.
12) Remove excess fat.
13) Put bamboo shoots and mushroom mixture with salt and cook for 1 minute.
14) Mix remaining ingredients and water to the pork.
15) Cook in simmering heat stir constantly till thick.

SERVING
16) Serve hot.

TIPS
Turn the content to a tight container and freeze. Reheat with 2 tablespoons water in a saucepan and cook covered stirring occasionally.
