Guinea Gumbo

Ingredients
  Whole guinea 2
  Water 3 Quart
  Flour 1 Cup (16 tbs)
  Oil 1⁄2 Cup (8 tbs)
  Onions 3 Large, chopped
  Bell pepper 1 , chopped
  Celery stems 2 , chopped
  Garlic 3 Clove (15 gm), minced
  Worcestershire sauce 3 Tablespoon (Lea And Perrins)
  Salt To Taste
  Black pepper To Taste
  Red pepper To Taste
  Bay leaves 2
Directions

Boil guineas until tender.
De-bone and set aside.
Make a dark brown roux with flour and oil.
Add onions, bell pepper, celery and garlic.
Saute until clear.
Add heated broth and cook very slowly for 2 or 3 hours.
Add the guinea meat the last 45 minutes of cooking time.
Add file if desired.
Serve over cooked rice.
Serves 8 to 10.
